Nutrition Australia’s National Nutrition Week is an annual campaign encouraging Australians to increase their vegetable consumption to the recommended five serves per day. This year to mark National Nutrition Week (10-16 October), Deakin University proudly launched a new healthy eating online resource called Nourished @ Deakin.
The purpose of Nourished @ Deakin is to enhance students’ knowledge and skills in food and cooking literacy. The project hopes to inspire behavioural change by encouraging students to prepare their own nutritious meals (and have fun in the kitchen while doing so!)
Leading this project were two third-year Bachelor of Nutrition Sciences students – Chelsea Hughes and Alessia Indovino. The students put together a selection of simple, nutritious recipes, packed with goodness and perfect for busy students on the go.
Alessia had this to say about the project:
‘Good health and nutrition is something most of us think about, but it can be easy to not know where to start when it comes to improving our eating habits. I’m really excited to be able to use my knowledge of nutrition to help others become the healthiest versions of themselves and build a really positive relationship with food.’
Nourished @ Deakin also features a number of educational resources, covering topics from food storage, dietary guidelines, finding healthy food options on campus and more.
The process of bringing Nourished @ Deakin to life included surveying Deakin students to learn about their food behaviours, and understand how they navigate meal planning and eating. Chelsea and Alessia shared their process:
‘We conducted a survey to gain insights into the dietary habits of Deakin students, using the information to help establish target areas such as increasing vegetable consumption, affordability, sustainability, and focus on meals that are commonly skipped such as breakfast.’
‘We chose to group Lunch & Dinner together, because we wanted to ensure these recipes were interchangeable to show how easy it is to make recipes in bulk to store in the fridge to have healthy options ready to go.’
The recipe videos and photography were produced by an external production company at Deakin’s Waurn Ponds Estate facility in early August, with help from Waurn Ponds Estates’ Executive Chef, Adam Draper. These videos featured ingredients sourced from the Waurn Ponds Community Garden, which has been established to promote sustainability practices such as minimising food waste and cooking with seasonal fresh produce.
Nourished @ Deakin has been delivered as part of Deakin’s Student Health Promotion Plan. This plan aims to create a healthy and supportive environment that prioritises and achieves positive health and wellbeing outcomes for students.
This project was delivered in partnership between Deakin’s Division of Student Life and Campus Services Division, with funding from health and care partner Bupa.
